My Recipe for Gluten Free Puff Pancakes (German Pancakes)
2 eggs
1/2 cup brown rice flour
1/2 cup milk or almond milk
Dash of salt
4 Tbs. butter (melted)
1tsp Vanilla
Mix dry ingredients together in a mixing bowl. Add eggs and milk, mix. Add vanilla Extract and butter, mix. Place in 10" x 10" corningware. Bake for 20-25 Min at 450 Degrees F.
While in the oven the pancake should produce puffed domes.
What to put on your puff pancakes:
Honey or Syrup
Butter or Margerine
Lemon Juice (try it!!!!)
